Establish the price in a signed contract. I was presented with a contract and accepted it verbally. I made the deposit. then after the workers had been at my house working for a couple of hours the owner called and said he under bid the job and wanted double the price to finish the job. He actually said he would have his crew walk away. Considering his initial bid came in lower than two other bids I compromised and paid more but nowhere near what he was wanted. The workers were very good and finished the job to my satisfaction. The good part of the rating is for the workers NOT the owner.
